Food Detox: Day Sixteen

I just finished baking tofu slabs.  I can't believe I would ever be writing that statement. Sometimes I surprise even myself!  I've come a long way from the girl living on her own who only had ketchup and beer in her refrigerator.

A blissfully quiet day here watching it rain.  No errands, no after school activities (cancelled because of the rain).  I switched our laundry room/coat room over from winter to summer.  I washed all the winter gear (snowpants, hats, gloves, etc.) and stored them and the snow boots to make room for the beach towels and sunscreen.  Wishful thinking on a cold, rainy day but summer will be here soon enough.  Next step is to get the summer clothes figured out for all the kids and see who needs what.  Mary and I may need to go shopping for her.  Oh darn.

Here's what I had today:
Breakfast - Banana-apple buckwheat muffins
I will definitely be making these again, they are tasty.
Lunch - Avocado and black bean tacos
The real star of this dish for me was the corn tortillas I found at Whole Foods.  They are sprouted corn tortillas made by Food for Life.  They have great flavor.  A good meal, I enjoyed the whole thing.
Dinner - Cooked egg and broccoli chickpea salad
I had the broccoli salad leftover from last week so I wanted to use it up.  It was ok as a leftover, I enjoyed it more when it was freshly made.  I'll keep this one on my list to use as a side.  Mental note:  make enough for one meal so there won't be leftovers.
