I weighed this morning since I completed the first seven days. I was - 6 lbs. from last Wednesday. Wow! Now I'm curious to see if I can maintain it. We shall see.
Today I was back in the kitchen prepping for the week. I roasted butternut squash (a first for me) and brussel sprouts and cooked quinoa and brown rice. I made the cherry date oat bars for snacking. I cooked for two of my three meals too. Thankfully for Mary (and me), today wasn't nearly as busy as yesterday so she had a chance to catch up on her naps while I cooked. All the dishes and pots were piled up when the boys got home from school this afternoon. "What's all this for Mommy?" and then very quickly "what's for dinner?" They were quite worried until I explained what I was doing and said they were having pancakes for dinner. They love breakfast for dinner.
Here's what I had today:
Breakfast - Banana oat pancakes served with orange wedges and honey
The honey and orange added just enough sweetness. The batter for these pancakes is thick so they take longer to cook than regular ones. I ran into a little trouble with temperature control so my first batch where pretty toasty. This batch had a much nicer golden color.
Lunch - Sesame kale salad
I forgot to take a picture of this one. I liked the dressing for this salad. The salad itself was okay, nothing too special.
Dinner - Black bean brown rice patties served with romaine (drizzled with olive oil and squeezed with lime), sliced avocado and red onion, and fresh cilantro leaves.
The patties could use a little kick, maybe some red pepper flakes.
Severe weather passed through our area this evening which sent us to the basement when we heard the tornado siren. We are fine and thankful that all is well here. There are reports of tornados that touched down in the STL area and damage reports trickling in. We'll have the full scope of it in the morning light.
