Here's what I had on Saturday:
Breakfast - Banana oat pancakes served with orange slices and honey
This recipe is from week 2 so I brought it back for this week. Thank you to Joe for making them for me.
Lunch - Chopped salad with oil and vinegar at Subway
I was a little worried about going to lunch there with George after we visited a friend in the hospital. I didn't think they would have anything I could eat but the chopped salads are new. I loaded it up with veggies and it tasted great. I had salt and pepper added to it too.
Dinner - At home: Blueberry-mint smoothie and cherry date oat bar; At the auction: Salad and green beans with almonds and red peppers. I missed out on the fried green tomato appetizer, fried chicken (a favorite of mine), cheesy potatoes and pecan pie for dessert. Total health food, I know, but it looked darn good. Thankfully the green beans were really good, I ate a big plate of them. They were serving bourbon slushes and mint juleps. I had my water flavored with mint for the evening and was the designated driver for the night.
Here's what I had today:

Lunch - Cherry date oat bar and a cup of ginger tea with honey
Dinner - Stuffed butternut squash and pears with honey and toasted hazelnuts for dessert
The recipe actually calls for acorn squash but Whole Foods was out of them the day I was there. It took longer to roast the butternut squash, otherwise it worked out well. I liked the toasted hazelnuts as a topping.
