I weighed in this morning to start off week 3 and was pleasantly surprised to see I'm minus 2.5 lbs. from last Wed., for a total loss of 8.5 lbs. in two weeks.
I learned my lesson from shopping with our five year old last week and went to Whole Foods while he was at preschool this morning. It was a nice, relaxed shopping trip with just Mary and me. I definitely bought less vegetables than I have for the past two weeks. I've enjoyed going there, I'm not sure yet how often I'll get there when I'm done with the action plan.
I have a confession to make. I skipped one of the recipes from last week and substituted other meals. It was lemon-herb sardine salad. I couldn't bring myself to do the sardines. I bought them but took them back today.
Funny kid story from today, totally unrelated to the food detox. Mary was out on the sidewalk riding along on her plastic lion. It is one of those toys the child sits on and uses their legs to make it go. Along comes the neighbor's little girl who just turned one. She was sitting in a kid size Mercedes-Benz with her blanket and toy and her dad is pulling the car with a rope attached to it. Mary and the little girl said hello to each other and then Mary just stared as they went down the sidewalk. She's thinking, "I'm riding on my plastic hand-me down lion and she's cruising in her brand new Mercedes-Benz. And she doesn't even have to use her feet to make it go." Can you tell which kid is the first born and which is the fourth born? Ha!
I made a green smoothie for a mid-morning snack today, super yummy. 1/2 cup water, 1 cup green grapes, 1/2 banana, 1/2 cup frozen pineapple chunks, 2 cups spinach. It took me about 3 minutes to do the whole thing including getting the ingredients out. Vitamix rocks.
Here's what I had today:
Breakfast - Banana-apple buckwheat muffins
Hooray, it was so nice to eat a good ol' carb. Very moist and yummy, you would never know there was no sugar added. Honey is the sweetener.
Lunch - Roasted red pepper and kale frittata
I was glad to see eggs added back in this week and I enjoyed this dish.
Dinner - I had a late lunch and the kids had an early dinner due to evening activities so I had a "snacky" dinner. An apple, half of a banana (leftover from the smoothie), almonds, raisins.
