The craziness of this week continues. I'm hanging in there and staying on my eating plan. We've had at least one thing if not two each night this week, plus appointments and errands each day. Proud mama moment, I went to conferences for all three boys at Sacred Heart yesterday. They are having great years and thriving at school. What a blessing. Joe was home last night and left again today after work to go fishing with my dad and the guys. I'll be glad to see him when he gets back on Saturday afternoon.
I bought a Magic Bullet high-speed blender mixing system today. I was at Kohl's browsing in the kitchen section and decided to give it a try. I was thinking about buying a juicer but this little guy "does it all". I'm planning to use this to make smoothies and juices, chop veggies and all kinds of other nifty things in 10 seconds or less. I'll let you know how it goes. Our "regular" blender is in the giveaway box, I've never liked it. I like our handheld blender so we'll see how the Bullet stacks up.
I am welcoming the return of a few gluten free carbs. and more protein this week. The salmon I had for lunch today was phenomenal.
Here's what I had today:
Breakfast - Banana oat pancakes
Still as yummy as yesterday.
Lunch - Baked salmon with coconut broth served with brown rice and sautéed veggies
I bought the salmon from the fish counter at Whole Foods. The lady behind the counter helped me decide what to get and I am thankful for her recommendation. The salmon was moist and delicious and the flavor wasn't too strong. Delightful!
Dinner - Black bean-brown rice patty and leftover red lentil and sweet potato stew
The stew rocks.
