Food Detox: Day Fourteen - One week to go

Today marks the end of the second week of the Whole Living 21 day food action plan.  Hip hip hooray!  I've made it this far, I can do one more week.  This past week's recipes introduced me to ways to use quinoa and add protein into my diet without adding meat to a meal.  I'm not becoming a vegetarian but I like to have meatless meals here and there.  Overall, the meals weren't as enjoyable as the first week.  There are a few keepers in there, especially the salmon recipe.  I'm still savoring the memory of that one.  I'll take what I've learned this week and use it when I have to go back to the "real world" of eating.

My energy level is fantastic.  I miss my daily dark chocolate.  And coffee.  Ok, so I've had a few cups of decaf coffee.  And wine.  And carbs.  Well, some carbs.  I'm okay with skipping cookies and cake.  I could just go for a piece of bread or a cracker with my salads.  I was pleasantly surprised to see muffins on the menu for breakfast the last week.  I made them tonight so I can have them tomorrow morning.  I tested one of them...mmmmm......

I got to play with my new mommy toy, the Vitamix, today.  I made two different smoothies and peanut butter.  I also used it to mix the wet ingredients and the fruit and nuts for the muffins.  It performed beautifully.  Joe and I loved the fresh peanut butter.

Here's what I had today:
Breakfast - Banana oat pancakes 
This recipe is a keeper, I'll make a few of these at a time and keep them in the fridge.  They would freeze well too.
Lunch - Baked sweet potato with greens
Good flavors mix together in a nice warm dish.  Be sure your sweet potato is done roasting.  I undercooked mine but it was too late to stick it back in the oven.
Dinner - Black bean brown rice patties with romaine lettuce

I also had a strawberry banana smoothie and a blueberry mint smoothie.  I tried making a green smoothie too.  It was ok, I made it half way through it before giving up. I didn't have all the right ingredients so I was winging it.
