Did I mention yesterday was pancake Saturday at our house? Joe and the boys have perfected a recipe using Trader Joe's multi-grain pancake mix, buckwheat pancake mix and flour to make nutrition packed pancakes that are light and fluffy. Joe makes about 35 - 40 pancakes and we freeze the leftovers for the boys to eat for breakfast. Oh boy, I wanted a couple of those hotcakes with real maple syrup. I didn't.
It has been a tricky weekend in the food temptation department but I managed to get through it. Hooray! I did have a dull headache most of the day. I was wiped out too with the busy weekend and the food detox. I was able to take a rest this afternoon while the kids did the same.
I forgot to mention earlier, there are three juices the first week which are listed for breakfast. I don't have a juicer so I'm substituting the smoothies for those days. I'm considering buying a juicer. Does anyone have one? Would you recommend it? Let me know in the comments section.
Here's what I had today:
Breakfast - Blueberry mint smoothie
Lunch - Roasted beets on greens (new)
Dinner - Red lentil and sweet potato stew (new)
This stew is amazing, I loved it. Again, lots of spices adding heat and flavor plus the cilantro was a tasty garnish. Joe tried some too and liked it. The only thing I wanted to add to the meal was a piece of bread or crackers to go with the stew.
I made a couple of snacks today too. Roasted spiced pumpkin seeds and spiced cashew cream with fruit. The pumpkin seeds satisfy the crunchy, salt craving and the cashew cream is sweet and light.
Two more days to go of cleaning the slate, then week 2 starts adding back in more foods.
